The first: the advertised piece count on a cookware set includes the lids. A set is priced and shelved on that number, so every maker has an incentive to make it as large as it honestly can be. An eleven piece set is usually six pans and five lids. Above about twelve advertised pieces, the extra numbers are rarely pans at all.

The second: no single material is good at every job. Clad stainless sears and builds fond for a pan sauce. Cast iron holds heat for a crust. Nonstick releases eggs and cannot be run hot. Enamel is inert and takes long acidic braises. A matching set forces one material on all four, which is why a mixed kitchen outperforms a matched one at every budget.

Also absent: claims to have cooked with the equipment. The research here is from published specifications, material properties and owner reports, and saying so plainly seems better than the alternative.
